Cool Fall days have me craving warm comfort foods.
Enjoy my quick and easy soup….

Melt 1/2 stick butter in soup pot. Add 1 onion, chopped; 1/2 green pepper, finely diced; 2 single stalks of celery, chopped; 2 tsp. minced garlic…sauté all till you get a rich color and almost completely cooked. Add 8 potatoes that have been cubed, I leave skins in for extra flavor and nutrients! Add to this mixture, 6 chicken boullion cubes, 6 cups water and 2 tsp Lawry’s seasoning. Simmer until potatoes are fork tender. Add 2 cups heavy cream or 2 cups whole milk and 1 cup sour cream if you don’t have heavy cream. I garnish each bowl of soup with freshly grated cheddar cheese & bacon and served with cheese crisps or toasted baguettes, fresh from the oven….or in my case my pizza machine!
